Calamansi: The Philipeno Tanger-lime.

Image and video hosting by TinyPic

Yes, I called my little friend, the calamansi, a tanger-lime. It's a mix between a tangerine and a lime, and can be drank straight or mixed in food. It's a multipurpose fruit that comes from the Philipeno Islands and is my favorite drink and seasoning EVER.

It's alot more zestier than lemonade but just as sweet with the real thing, when made into a drink. Alone, I've never tried them but they smell like fresh tangerines! I bet just as succulent. These will be the key ingredient to an Asian spin on Meringue Pie :D
Look out for it!

Enjoy ~

I made this a straight brown sugar crumble due to the lack of cinnamon. And since I had nectarines...I thought it would be a tasty test run~

1/4 flour
1/2 cup brown sugar and oats [i used oatmeal...my oats were ruined by little buggies]
1/4 cup butter
3 large peaches
4 nectarines

Method:
1. mix the dry ingredients and butter together until the butter is crumby

Absurdly Easy Fudge

So while looking through my cabinet this morning, I found peanut butter and condensed milk. I wanted to make fudge but I didn't know if we had all the ingredients to make FULL ON fudge. But I did find a recipe to make 'Absurdly Easy Fudge' from CookingForEngineers.com :](click blog title for link to website)

All it takes is this:
16 oz. (450 g) peanut butter chips
4 Tbs. (57 g) butter
14 oz. (396 g) can sweetened condensed milk

My ingredients were like this:
6 tablespoons of peanut butter
4 tablespoons of butter
1 can of condensed milk
3 tablespoons of caramel

Instead of chips, I'm going to be using actual peanut butter and melting it with the butter down in my microwave. It just seems easiest.

Method:

I combine the peanut butter, caramel and butter into a microwave safe bowl and melt in intervals of 15 seconds until its melty and glistens.
Stir to combine, it took 30 seconds of my mixture to look like this::

I add the condensed milk like the recipe says, and stir until it's all combined.
[It looks super pretty~ And tastes great too~!]

Setting it in a tray or mold, I let my fudge sit and chill on the counter a little bit before placing it in the fridge for two hours or so. This goes for only if you're double-boiling your ingredients, with microwave, as soon as you stir it, it's cool enough to place in the mold.

Remove from fridge and cut into squares.

Enjoy! Images of my finished fudge shall be posted soon!!
